Because it was a tradition. It was Doyle's ex who said they didn't really follow tradition, but they felt that since it was a tradition they should do it.
Also consider that she first met them while studying demon culture. They probably felt she would be okay with this since they were honoring their ancient traditions.

One of the reasons given for eating Doyle's brain was that the love Doyle & his ex had would become part of groom. Except that since Doyle & her had broken up, wouldn't the problems in the marriage be transfered as well as the love?

Well, I've noticed that people in general are attracted to the same types of people and that if you examine someone's dating history you will find more similarities than differences.

However, outside of Doyle & her new fiance being demons, I don't think there were a lot of similarities. Her fiance was a successful businessman, Doyle is a loser, who seems to always be in debt. The fiance was proud of his family, Doyle didn't like being half-demon. Her fiance had no problem with killing, Doyle does.

Maybe she just has a thing for Demons? A demon groupie.

I initially wondered why, when his full name is Alan Francis Doyle, he'd previously chosen to be called by his middle name. Then it became obvious: it was so he could be called Frank! (He must have changed to his surname when he felt he didn't deserve the honour any more ...)

The actor (Carlos Jacott) who played Richard (the fiance) in this episode is the same actor who played Ken, the main villain in the Buffy episode "Anne", just a year earlier.
