I realize that sleep deprivation can affect judgement, but how did Wesley miss that Oracle at Delphi moment. He asks if Angel will kill his son & Lord of the Hamburgers says, 'the vampire will consume his offspring' or something like that. Did Wesley need a flashing sign saying "Loophole!" to realize that something is up?

The loophole is that neither the original prophesy nor the Mayor McCheese God confirmed that the father and son were specifically Angel and Connor.
So there are other possibilities available. The most obvious one being that Angel will dust some vamp that he'd sired when he was Angelus. Another possibility is that Sahjhan's time-shifting somehow tricks Holst into killing his son, though Holst would have to become vamped in this case. And there's the chance that we find out that Angel is not Connor's father, that some other vamp was and he kills Connor, or.....
That's why prophets and oracles love the vague answer. No matter what happens, they can say "See, I was right!"
