There are two very clever Easter Eggs in the double-pack (JK plus Mysteries of the Sith):

In the first game, on the first Barons Hed level, you can access a secret area (if you're fast enough) by running into a small house, just as a woman is leaving (it's the one before the bridge leading to the marketplace about halfway through the level). Get in as fast as you can, and you'll be rewarded with a 3D rendering of Max the Rabbit (from TV's "Sam and Max") complete with his own Bryar pistol! And he's indestructible!

There is also a hidden level in MotS which can only be accessed by moving files about and unzipping archives. I can't remember which file it is in on the CD, but once accessed, you can play out a recreation of the final battle scenes in "The Empire Strikes Back", with you as Luke Skywalker at Cloud City, complete with carbon freeze chamber. Boba Fett, Darth Vader and for some reason the evil Mara Jade all make special appearances here. (Scenes from this secret level were used as multiplayer maps for MotS, together with the Lars Homestead from "A New Hope" and the Death Star II Throne Room in "Return of the Jedi".)

There's another Easter Egg in Mysteries of the Sith. In one of the pirate levels (with you as Mara Jade) - I think it's the one where you have to steal a holocron - you'll come across a trophy display. Within it you'll find two interesting items - General Mohc's Darktrooper helmet (from "Dark Forces") and the much sought-after head of the droid 8t88 (from "Jedi Knight").

After you fight Tavion , Kyle grips her and moves her to over a ledge dangling her threatening to let her fall. Problem is that to do this requires grip level 3 , which he doesent have at this point, I think he only has level 2, but definitly not level 3. Interestingly enough, if you use cheats to give yourself grip level 3, it's impossible to throw her over the edge (because she has to 'die' by your saber so Kyle can interogate her)

The games does do an excellent job of re-creating storm troopers incredible markmanship . to see what I mean just stand still while one fires at you, often (depending on the difculty level) he will miss you 75%+ of the time)

Nobody mentioned the MOTS droid Balet room. It's been awhile, but I believe it's in the village/marketplace level.

As for Jedi Outcast... Best. Game. Ever!

Lando! (and that funny way he says "Bespin")
