Is the ST: Insurrection Enterprise-E with detachable Captain's yacht better than the plain ST: First Contact Enterprise-E?
I would say it was. It resembles the E better, however it is still pretty incorrect in many spots.

If you're referring to how it is still inaccurate, the mold for the ship is still the mold for the "First Contact" one, with some modifications (the bridge is different and the impulse engines are in their correct location). The deflector dish is red and lacks the detail that the studio model has, and is set in too far. It was still pretty good, though.
The best toy, as far as accuracy goes, is the U.S.S. Defiant.

That's okay! Yeah, I was happiest with the Defiant. It has four sounds (unlike some recent ones) and displays well, plus most of the colors and proportions are accurate. You also don't need to unscrew the battery compartment to connect the display stand either, a panel pops out and you snap the base in.
I know this isn't an accessory to action figures, but now that DS9 is over I'm desperately looking for a model of the station -- preferably the fiber optic light up one. Does anyone know a catalogue or any other where I could find it?

I haven't seen any Star Trek spaceships since before they released the Star Wars SE out in theateres. Have SW toys affected the release of ST toys at all?

The reason no new Star Trek spacecraft haven't been released is because more concentration has been put on the action figure lines, and Target is the only retailer to commit to large-scale Trek merchandise.
The box for the Defiant toy has several problems.
First, the Defiant isn't a Valiant-Class ship. It's the first of it's kind, so it should be "Defiant-Class."
Second, The box says "To Boldly go Where No One Has Gone Before." That's the Enterprise's motto, not the Defiant's. The Defiant's is "All I Ask Is A Tall Ship And A Star To Steer Her By."
Finally, one of the sounds is "Photon Torpedoes." While the Defiant did have aft photon torpedo bays, we mainly saw quantum torpedoes used. These would be more appropriate.
The Enterprise-D bridge was fun for me when I was younger. I remember lifting the whole thing off the ground and shaking it (Picard and Co. inside it) and watching in amazement as the figures flew all over the place. I even imitated the crash sequence from Generations when the movie first came out...
