I REALLY love the opening theme for "Voyager". It sounds like a sailing vessel on the open seas. The French Horns are really beautiful.

Agreed. Deffinetly rhe best opening music for a Star Trek series. (In fact, it was the beautiful and awe-inspiring quality of the Voyager opening, combined with the potential of new special effects technology that left me so crushed when 'Enterprise' chose to open with a guy singing and a montage of old footage. I was hoping for an opening to rival Voyager's!)

Other great music:
The species 8472 music from scorpion. (or maybe it was the Borg theme from 'Dark frontier'. Sort of a blaring Dun-dun-dun, duh duh duh, Dun-dun-dun, duh duh duh...)
The Captain proton music from any episode.
The Doctor's opening song from 'Tinker, Tenor, Doctor, Spy.'

There's more, of course, but those are the first examples that come to mind.
